Dehydrated Garlic Products

Hardneck garlic needs to be planted in the fall. So after a busy harvest, we are right back in the field planting next year’s crop. Once all the cloves are tucked into the soil, garlic is still top of mind, but our garlic efforts are now focused indoors. Our dehydrated garlic products are a great way to carry garlic lovers through to scape season, July, and then into garlic harvest, September.
Our dehydrated products are single ingredient, meaning they contain no fillers, anti-caking agents or preservatives. The taste will speak for itself. The feedback from our customers is that our products are so much more flavourful than grocery store garlic powder. A little goes a long way. I typically advise new customers, that may be accustomed to doubling the amount of garlic powder called for in a recipe, to go back to the originally called for amount, until they get a sense of the potency of our products.
We offer three different dehydrated garlic products:
- Garlic Powder
- Garlic Nuggets
- Garlic Scape Powder
Garlic Powder
Everyone is pretty familiar with garlic powder. No spice rack is complete without it, and it is the one I have to refill the most.

Garlic Nuggets
Now everyone may not be so familiar with garlic nuggets. Imagine a grain size similar to Kosher Salt, only all garlic. I use garlic nuggets where I want garlic taste, and some texture. My favourite way to use nuggets is when I butter braise meat. I add the garlic nuggets, along with all my other favourite spices to the butter mixture, which is then drizzled over whatever I am roasting. The nuggets will contribute to a nicely, crisped crust. Some of the nuggets will also make their way into your drippings. In this application, the nuggets will not fully rehydrate, so you are left with some crunchy garlic bits in your gravy.
The nuggets are also a great addition to soups and sauces. If you are doing a long simmer, they may fully rehydrate, and if not, you get firm garlic bits in your recipes.
Garlic Scape Powder
Like the scape itself, the scape powder is still garlicky, but a little less intense with a nice herbaceous back tone to it. I like flavourful eggs, but I do not want full on garlic first thing in the morning. Garlic scape powder offers up a nice way to flavour up your eggs, keeping it a little more subtle. Keeping with the egg theme, garlic scape powder is a great way to flavour and decorate devilled eggs and those breakfast caseroles. I also use scape powder with my homemade potato wedges, to season popcorn and to toss into some pasta with olive oil and parmesan cheese.
