Chesnok Red

This Purple Stripe is reputed to be the most therapeutic of the varieties. It has a fabulous smell! When eaten raw, it gently says hello to your palate, then progresses to a strong and intense personality which tends to stick around. This garlic is a good garlic for basic cooking and

adds a sweet garlic flavor without heat to dishes. It has an distinct smell, more like a roasting sweet onion than a garlic.

Red Russian

This is a Marbled Purple Stripe that has heat but will not leave you scorched. Our experience is that it has a beautifully consistent garlic flavour…steady and true. When cooked it has a potato-like texture. The cloves are large and easy to peel.

Creme de la Rasa

Another Marbled Purple Stripe that has a wonderful, robust, well-rounded, and true-garlic flavour. These have loose skins which make them easy to peel, coupled with larger bulbs.

Red Rezan

This Glazed Purple Stripe has medium heat, holds up well in cooking and it has little aftertaste. Red Rezan has a complex flavor that works well with meat or strong flavored vegetables. It is the most beautiful of the bulbs we grow, with a pearled finish to the skins that change colour depending upon the angle of the light.

Persian Star

This purple stripe is very flavourful, with a true garlic taste that is not sulfurous or overpowering. The bulb is attractive and the colouring is very striking. It will store for about six months.

Legacy

Legacy is moderately spicy when first harvested and then mellows with time. This variety has a rich and smooth flavour, making it particularly good for roasting and baking. The cloves are easy to peel and it stores well.

Leningrad

Like Music, Leningrad is a Porcelain variety. The bulbs are large and after a mellow start it finishes with intensity. Leningrad has lingering heat, making it a great variety for baking, mincing and grilling. It will store for about six months.

Tibetan

Tibetan is probably our hottest variety. If you are brave eat it raw, and buckle up.

We have bulbs available starting in September, until they sell out (usually by December).

Now that you have your garlic bulbs, storage is so important. Fresh bulbs need to be properly cured to ensure longer term storage. The stem on a cured bulb is hard and the protective wrappings are dry and papery. We store our garlic in our cold room. Ideal garlic storage is cool (not cold), dark and dry, with good air flow. Cardboard beer or pop can flats make a great container to store your garlic. Garlic should never be stored in a fridge.

Use your biggest bulbs first. Smaller bulbs store longer.
